Make use of plum season with our non-alcoholic plum & cardamom bellini. Delicate & fruity.
For the Plum Syrup:
6 plums
0.5 cup sugar
1 cup water
Optional: Cardamom pods
Halve the plums & remove the stones. Dissolve the sugar in water over a medium heat.
Add the plums & bring to a boil. Crack the cardamom pods and add to liquid. Simmer for 5-10 mins or as long as it takes for the plums to soften. Remove the cardamom pod.
Blend the liquid using a hand blender until smooth. Strain through a fine sieve over night.
Bottle and store in fridge - consume within 2 weeks.
For the Bellini:
Simply mix 1 part plum syrup with 2 parts Sparkling English Rose.
